Grilled Lemon-Herb Chicken with Asparagus

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • Zest and juice of 1 lemon
  • 1 tsp chopped fresh thyme
  • 1 tsp chopped fresh rosemary
  • Salt and pepper to taste

Method

  1. Marinate chicken in olive oil, lemon juice, thyme, rosemary, salt, and pepper for minimum of 30 minutes.
  2. Grill chicken over medium heat for 5-6 minutes per side. Grill asparagus alongside for 3-4 minutes, turning occasionally.
  3. Serve with lemon zest sprinkled over the top.
