Herb-Crusted Salmon with Spring Vegetables

Ingredients

  • 2 salmon fillets
  • 1 tbsp Dijon mustard
  • ¼ cup panko breadcrumbs
  • 2 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 1 tbsp olive oil
  • 1 bunch asparagus, trimmed
  • 1 cup baby carrots, halved
  • Salt and pepper to taste

Method

  1. Preheat oven to 400°F. Brush salmon with Dijon mustard.
  2. Mix breadcrumbs, parsley, chives, olive oil, salt, and pepper, then press onto salmon.
  3. Arrange salmon and vegetables on a baking sheet. Roast for 12-15 minutes until salmon is cooked and vegetables are tender.
