Roast Duck Breast with Cherry Reduction

The Pinot Noir’s red fruit profile pairs beautifully with the richness of duck and the tartness of cherry sauce.

Ingredients

  • 2 duck breasts
  • Salt and pepper to taste
  • 1 cup fresh cherries, pitted and halved
  • ½ cup red wine – preferably NOT the Carte Blanche Pinot Noir
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey

Method

  1. Score the duck skin and season with salt and pepper.
  2. Cook skin-side down over medium heat for 6-8 minutes, rendering the fat. Flip and cook for another 3-4 minutes. Let rest.
  3. In the same pan, add cherries, red wine, balsamic vinegar, and honey. Simmer until reduced.
  4. Slice duck and drizzle with cherry reduction.
